Gordo Gustavo’s was started by Santa Cruz local Austin Towne with the goal of bringing people exceptional meats – they’re doing a darn good job. From smoking all of their own meats and multi-day brines, to making sauces and dry rubs from scratch, this crew is super dedicated to the process. Some of the meats they serve take as many as four days of preparation. When the meat is done they tuck it into tacos, sliders and sandwiches.
Gordo started small with farmer’s markets and has since paired up with a handful of breweries and other pop-ups around the county. They are thankful for their following and the people that truly enjoy some smoke. A great match for the farmers’ markets, Austin and his partner in crime Tom Ferdinand are invested in sourcing vegetables from local farms, veggies they use for sides or toppings like slaws, jalapeno chimichurri and all kinds of sauces. You can find Gordo Gustavo at the Downtown, Westside and Live Oak markets. At the morning weekend markets Gordos has fried eggs on their dishes too. They serve them up with compostable utensils and send you on your way.
